So, here is a pic of me holding my finished Spinach Artichoke Mac N Cheese. I did add little pieces of chicken tenderloin to the dish when I was cooking the onions so as not to brown the chicken. Wow! I am so impressed with this dish. Even with the crappy cheese that I put in it. I can only imagine how yummy Rachael's version is with the expensive cheese.
I loved having this as my Valentine's Day dinner and might just have to make a tradition...well, if I didn't love seafood so much I guess I could commit to that tradition, but I dunno.
