I love Mardi Gras, I hope to have a big party one year. King cake is yummy and fun (since whomever gets the baby hosts the party the next year, or at least provides the King Cake).
We don't follow a recipe for jambalaya. Instead we just throw stuff in until it tastes awesome:) And we use crawfish instead of shrimp. Mmmmm!
